Ingredients
- 2 tbsp sherry vinegar
- 1 tsp Dijon mustard
- 2 garlic cloves, finely grated
- 50ml olive oil
- 500g ready-cooked Puy or small green lentils
- 300g canned tuna, drained and flaked (in water or oil, depending on your preference)
- 160g cherry tomatoes, halved
- 2 ready-roasted peppers, chopped
- Handful of parsley, finely chopped
- ½ small bunch of chives, finely chopped
Method
1. Whisk the vinegar, mustard and garlic in a small bowl. Slowly drizzle in the oil, whisking as you go, until emulsified, then season.
2. Put the lentils, tuna, tomatoes, peppers and most of the herbs in a large bowl and toss together. Pour the dressing over and toss again. Divide between bowls and sprinkle with the remaining herbs.
