Ingredients
- 1 tsp paprika
- ½ tsp ground cumin
- 1 tbsp wholegrain mustard
- 1 tbsp honey
- 1½ tbsp olive oil, plus extra for greasing
- Zest and juice of 2 limes, plus extra wedges to serve
- 1kg chicken drumsticks, skins removed, if preferred
- Salt and freshly ground black pepper
- 1 bulb garlic, halved
- Fresh coriander leaves, to garnish (optional)
Method
1. Combine the paprika, cumin, mustard, honey, oil, lime zest and juice in a small bowl. Place the chicken in a large bowl and drizzle over the marinade. Season with salt and pepper, then toss the chicken to coat. Nestle the garlic halves among the chicken. Cover and leave to marinade for about 30 minutes. Preheat the oven to 200°C/Fan 180°C/Gas Mark 6.
2. Lightly grease a baking tray or ovenproof dish. Add the marinated chicken along with the garlic bulbs and spread out in a single layer.
3. Bake for 30 - 35 minutes or until the chicken is golden and the juices run clear when inserted with a skewer. Garnish with the coriander leaves, if using. Serve with rice, a tomato and onion salad and peas, if liked.
