Ingredients

- 6 x 150g salmon fillet
- 100g fresh breadcrumbs
- 35g fresh chives, finely chopped
- 35g fresh thyme, leaves picked
- 2 tsp finely grated lemon zest, plus 1 lemon thickly sliced
- 3 tbsp olive oil
- 1 tsp fennel seeds
- Salt and freshly ground black pepper

Method

1. Preheat the oven to 200°C/180°C Fan/Gas Mark 6. Line a baking dish with baking paper and add the salmon fillets.

2. Combine the breadcrumbs, herbs and lemon zest in a bowl. Stir in 1½ tbsp of the olive oil and the fennel seeds. Press the crumb mixture over the salmon and drizzle with the remaining oil. Season with salt and pepper, then arrange the lemon slices in the dish.

3. Bake for 10 - 12 minutes, until the fish flakes easily and the crust is golden. Garnish the salmon with micro herbs and serve with a green salad, if liked.
