Ingredients

- 8 pork belly strips
- 1 tbsp olive oil, plus 6 tbsp extra
- 1 onion, finely chopped
- Salt and freshly ground black pepper
- 180g barbecue marinade
- ½ red cabbage, thinly shredded
- ½ green cabbage, thinly shredded
- 1 red apple, cored, halved and thinly sliced
- 1 fennel bulb, trimmed and thinly sliced, fronds reserved
- 2 tsp wholegrain mustard
- 2 tsp honey
- Juice of 1 lemon
- 1 - 2 tbsp sesame seeds

Method

1. Preheat the oven to to 200°C/180°C Fan/Gas Mark 6. Rub the pork belly strips all over with the olive oil. Put into a roasting tin and scatter round the onion. Cook for 30 minutes until lightly browned, then pour off any excess oil. Pour the barbecue marinade over the pork belly strips, and toss well to coat. Cook for a further 25 minutes or until cooked through and sticky.

2. Meanwhile, toss the red and green cabbage, apple and fennel together in a bowl.

3. Whisk together the mustard, honey, lemon juice and extra olive oil in a jug and pour over the coleslaw mix and toss well.

4. Serve the BBQ pork slices with the apple coleslaw and sprinkle over the sesame seeds and reserved fennel fronds, to serve.
