Cheddar Crackers

Takes: 40 minutes (plus chilling time)
Serves: 30 - 40 (makes)

Ingredients

- 250g plain flour
- Salt and freshly ground black pepper
- 60g unsalted butter, chilled and diced
- 200g Cheddar, grated
- Salt and ground black pepper
- Toppings of your choice (optional): Pink peppercorns, poppy seeds, herbes de Provence, sesame seeds, etc.

Method

1. Sift the flour into the bowl of a stand mixer fitted with the paddle beater, or a large bowl if mixing by hand. Season with salt and pepper. Add the butter and beat until the mixture is well blended and crumbly. Mix in the cheese until evenly distributed.

2. With the mixer running on low speed, mix in 3 - 4 tbsp water, one at a time, until the dough comes together into a ball after a few minutes. Cover the dough with cling film and chill overnight.

3. Preheat the oven to to 180°C/160°C Fan/Gas Mark 4. Roll out the dough on a sheet of baking paper to a thickness of about 3mm. Using a rolling pizza cutter or sharp knife, cut the dough into 30 - 40 squares. Alternatively, use a cookie cutter to make other shapes of your choice, removing the excess dough between the shapes. Carefully transfer the baking paper and dough to a baking sheet. If using toppings, scatter them over the top and press them down lightly.

4. Bake the crackers for 15 - 20 minutes, or until lightly golden.
