Spicy Apple & Fig Chutney

Takes: 1¼ hours
Makes: 4 jars (approximately 200g)

Ingredients

- 400g dried figs
- 200g dried apricots
- 1 red apple
- 1 medium sized onion
- 1 piece ginger (approximately 30g)
- 250g raisins
- 300g brown sugar
- 2 oranges (peel and juice)
- 2 tsp ground cloves
- 200ml whiskey
- 300ml light balsamic vinegar
- Salt and pepper

Method

1. Chop up the figs, apricots, and apple into small pieces. Finely dice the onion, then peel and grate the ginger.

2. Place all the ingredients in a large saucepan and bring the mixture to a gentle boil, stirring continuously. Turn down the heat and simmer for a further 40 minutes stirring occasionally until the mixture thickens and develops a 'jammy' consistency.

3. Remove for the heat and season to taste with salt and pepper.

4. Allow the chutney to cool before storing in sterlised jars. Chutney will keep for around 3 months if stored carefully.
