Almond Snowballs

Takes: 40 minutes (plus chilling and cooling time)
Serves: 16 (makes)

Ingredients

- 2 egg whites
- 100g caster sugar
- 175g ground almonds
- 1 tsp almond extract
- 55g blanched almonds, chopped
- 55g icing sugar, sifted

Method

1. Line 2 large baking sheets with non-stick baking paper.

2. Place the egg whites in an electric mixer or large bowl and whisk on full speed until they look like clouds. Slowly add the caster sugar, 1 tsp at a time, until stiff and glossy.

3. Gently fold in the ground almonds, almond extract and chopped almonds until well incorporated, being careful not to knock any air out of the mixture. Chill in the fridge for 30 minutes to firm up.

4. Preheat the oven to 180°C/160°C Fan/Gas Mark 4.

5. Place the icing sugar in a large bowl. Using wet hands, shape the mixture into 16 balls and coat in the icing sugar. Place on the baking sheets, leaving space for the balls to spread.

6. Bake in the preheated oven for about 20 minutes, until pale golden and a hard crust has formed. Remove from the oven and leave to cool on a wire rack.
