Ingredients
- 4 regular tea bags
- 2 tbsp sugar
- 500g fresh strawberries, hulled and chopped, plus extra, sliced to serve
- Juice of ½ lemon
- Thinly sliced cucumber, to serve
Method
1. Pour 500ml of boiling water the teabags in a large jug. Stir in the sugar and leave to stand for 5 minutes.
2. Meanwhile, place the strawberries in a blender or food processor and blitz until smooth.
3. Remove the teabags from the jug. Strain the strawberry puree through a sieve into the jug with the tea, pressing the mixture using the back of a spoon and scraping the bottom of the sieve. Stir well.
4. Add the lemon juice and 500ml of cold water, then chill in the fridge for 2 hours.
5. Fill four to six serving glasses with ice and add a few slices of strawberry and cucumber. Pour in the chilled strawberry tea. Serve garnished with mint leaves, if liked.
