Ingredients
- 675g russet potatoes, scrubbed and cut into 1cm planks, then 1cm strips
- Finely grated zest of 2 lemons
- 60ml olive oil
- ¾ tsp kosher salt
- ½ tsp freshly ground black pepper
- 5 tbsp finely grated Parmesan
- Handful of fresh parsley, finely chopped
Method
1. Preheat the oven to 200°C/Fan 180°C/Gas Mark 6. Submerge the potatoes in a large bowl of ice water for 5 minutes, then arrange them on clean kitchen paper and pat them dry.
2. Transfer the fries to a large bowl and add all but 1 tsp of the zest, the olive oil, salt, and pepper. Toss to coat well. Add 4 tbsp of the cheese and gently toss to coat again.
3. Arrange the fries on a rimmed baking sheet in a single layer. Sprinkle any cheese mixture remaining at the bottom of the bowl over the fries. Bake until crisp and golden, 30 - 35 minutes, turning every 10 minutes or so to avoid sticking and to ensure even cooking and browning.
4. Transfer the fries to a large serving dish, and garnish with the remaining cheese. Sprinkle with the parsley and reserved lemon zest and serve hot.
