Ingredients
- 2 tbsp sunflower oil
- 3 tbsp golden caster sugar
- 1 medium egg
- 1 tsp vanilla extract
- 4 tbsp self-raising flour
- 1 canned pineapple ring, drained, plus 1 tsp syrup from the can
- 1 glace cherry
Method
1. In your mug, mix together the oil, sugar, egg and vanilla using a fork until smooth. Add the flour and mix until just smooth.
2. Using a knife, make a cut in the pineapple ring so you can overlap it to make the ring fit your mug. Microwave for 40 seconds, then place the pineapple and cherry on top and microwave for a further 30 seconds, or until risen and springy to touch.
3. Drizzle over the pineapple syrup, then dig in and enjoy.
The cake can be served in the mug or if you wish prior to applying the syrup, remove the cake from the mug on to a serving plate and then drizzle over the syrup as per the image.
