Ingredients
- 150g (5¼oz) dried macaroni
- 500ml just-boiled water from a kettle
- 1 tbsp sunflower or vegetable oil
- 150g (5¼oz) full-fat soft cheese (such as Philadelphia)
- 75g (2¾oz) mature cheddar, finely grated
- A pinch of ground paprika (optional)
- Freshly ground black pepper, for seasoning
Method
1. Put the pasta in a large, deep microwaveable bowl - it will need to hold at least 3 litres.
2. Place the dish or bowl on a plate, stir in the just-boiled water and oil, cover without sealing tightly and cook on high for 10 minutes (1000W), 11 minutes (800W), or until tender, stirring after 5 minutes. Take care when you remove the lid, as steam will billow out.
3. Drain the pasta, reserving the cooking liquid, then return the pasta to the bowl. Add 5 tbsp of the pasta water, the soft cheese and roughly ⅔ of the cheddar. Mix until this melts, forming a creamy sauce. Season with ground black pepper and sprinkle with the remaining cheddar and a pinch of ground paprika.
4. Cook uncovered on high for 2 minutes (1000W), 2½ minutes (800W), or until hot. Serve.
Notes:
A. If your microwave does not have a turntable, it is important to turn the food a few times to make sure it cooks evenly. Please take care when turning as the food will be hot so use oven gloves or tongs.
