Ingredients
- 250g plain flour
- 75g cornflour
- 1 tbsp curry powder
- Pinch of bicarbonate of soda
- Salt and freshly ground pepper
- 500ml soda water or light beer (either will give the 'wings' a lighter texture)
- 1 egg, lightly beaten
- Vegetable oil, for deep frying
- 1 medium cauliflower, cut into medium florets
- 250g Greek-style yogurt
- Small handful of fresh mint, finely chopped, plus extra, whole, to garnish
Method
1. Sift the flours, curry powder and bicarbonate of soda into a medium bowl. Season with salt and pepper. Using a round-ended knife, mix in the soda water (or light beer) and egg until just combined but still quite lumpy. Place the bowl in a larger bowl or sink half-filled with ice-cold water.
2. Heat 7½ cm oil in a large heavy-based saucepan over a high heat until a cube of bread sizzles when added.
3. Dip the cauliflower florets into the batter and shake off any excess. Deep-fry in four batches for 2 - 3 minutes each until golden. Drain on kitchen paper.
4. Combine the yogurt and mint in a bowl. Season. Garnish the cauliflower with the extra mint and serve with the mint dip and naan bread and lime wedges, if liked.
