Ingredients
- 250g (9oz) mushrooms, cleaned and de-stalked
- 1 tsp vegetable oil
- 1 onion, finely sliced
- 1 piece of ginger, thumb size
- 2 garlic cloves, crushed
- 2 tbsp Rogan Josh paste
- 400g (14oz) chickpeas, drained and rinsed
- 400g (14oz) tinned chopped tomatoes
- 1 tbsp tomato puree
Method
1. In a very non stick pan, sear mushrooms for 5 minutes. Remove from the pan and put to the side.
2. In the same pan, gently heat the oil, add the onion, ginger and garlic. Cook until soft (if they start to catch, add a tbsp of water to the pan).
3. Stir in the Rogan Josh paste and heat for 2 - 3 minutes. While still on the heat add the chickpeas, tomatoes and the tomato puree along with the cooked mushrooms. Stir and cover for 5 minutes.
4. Serve with brown rice or a packet of ready cooked grains.
