Ingredients
- 500g (1lb) red cabbage, finely sliced
- 1 small red onion, finely sliced
- 5 tbsp olive oil
- 3 tbsp white wine vinegar
- Juice of 1 freshly squeezed orange
- 1 tbsp sugar
- 1 tbsp Dijon mustard
- 1 tsp salt
- 2 apples, cored and sliced
- 100g (3½oz) toasted walnut pieces
Method
1. Place the cabbage and onion in a bowl. Add the olive oil, vinegar, orange juice, sugar and mustard, plus the salt. Mix and leave to infuse.
2. Just before serving, add the apple to the bowl and mix.
3. To serve, sprinkle with the walnut pieces.
