If served as four portions, provides 300 cals, 3g fat (of which 1g saturates), 3g sugar and 2.9g salt per portion.
Ingredients
- 200ml (7fl oz) buttermilk
- 1 tbsp chilli
- 1 tsp turmeric
- 1 tsp garlic powder
- 1 tsp onion salt
- 1 tsp smoked sweet paprika
- 1 tsp celery salt
- 1 tsp dried thyme
- 100g (4oz) plain flour
- 60g (2½oz) panko breadcrumbs
- 500g (20oz) mini chicken breast fillets
- Black pepper
- Spray oil
Method
1. Preheat the oven to 220°C/Fan 200°C/Gas Mark 7.
2. Combine the buttermilk with ½ tsp of each of the herbs, spices and a twist of black pepper in a large bowl, add the chicken and toss to coat. Leave to marinate in the fridge for a few hours.
3. Mix the remaining spices with the flour and the breadcrumbs together and tip onto a large plate.
4. Dip each piece of chicken from the marinade into the flour mix, coat on both sides.
5. Transfer all the coated chicken to a wire cooling rack set over a baking tray.
6. Spray each chicken piece with a little oil. Bake in the pre-heated oven for 15 - 20 minutes.
7. To check the chicken is done, the core temperature should reach 75°C for 2 minutes, or cut open and the meat should be white.
