Ingredients

- 40ml vegetable oil
- 1 red pepper, deseeded and sliced into strips
- 1 green pepper, deseeded and sliced into strips
- 125g broccoli, cut into small pieces
- 125g sugarsnap peas, halved lengthways
- 1 small red chilli, halved, deseeded and finely chopped
- 30cm piece fresh ginger, peeled and grated
- 2 garlic cloves, peeled and minced
- 1 packet ready to wok noodles
- 150g cooked and peeled king prawns

For the sweet & sour chilli sauce:

- 25g runny honey
- Juice of ½ lime
- ½ tsp dried crushed chillies

Method

1. For the sweet and sour chilli sauce, mix together all the sauce ingredients in a small bowl. Set aside.

2. Heat the oil in a wok or large frying pan then add the peppers, broccoli, sugarsnap peas, ginger, chilli and garlic. Stir-fry for about 7 minutes.

3. Add the noodles, prawns and sweet and sour chilli sauce, then heat through for another 7 minutes until the noodles and the prawns are piping hot. Serve immediately.
