Ingredients

- 2 x 250 packet microwave jasmine rice
- 2 tbsp peanut oil
- 2 rashers bacon, trimmed and chopped
- 2 spring onions, chopped, white and green parts separated
- 125g baby corn, or use 340g can sweetcorn, drained
- ½ red pepper, deseeded and chopped
- 100g mangetout, trimmed and chopped
- 2 tbsp soy sauce
- 1 tbsp sweet chilli sauce
- 1 tsp chilli paste
- 4 eggs
- ½ iceberg lettuce, shredded
- 1 tbsp crispy fried onions
- 1 tbsp peanuts, toasted

Method

1. Cook the rice according to the pack instructions.

2. Meanwhile, heat 1 tbsp of the peanut oil in a wok or large frying pan over a high heat. Stir-fry the bacon for 1 - 2 minutes, until golden. Add the white part of the onions, the baby corn or sweetcorn, the pepper and the mangetout. Stir-fry for 3 - 4 minutes until the vegetables are starting to soften.

3. Mix in the heated rice with the soy sauce, sweet chilli sauce and chilli paste. Stir-fry for 1 - 2 minutes to heat through. Stir in the chopped green parts of the spring onion.

4. In a large frying pan, heat the remaining peanut oil over a high heat. Crack the eggs into the pan and cook for 2 - 3 minutes until set.

5. Serve the nasi goreng on a bed of shredded lettuce, topped with a fried egg. Sprinkle with the crispy fried onions and the toasted peanuts. Serve immediately.
