Ingredients
- 2 salmon fillets, defrosted if frozen
- Salt and freshly ground black pepper
- ½ tsp dried chilli flakes
- 1 tbsp olive oil
- 150g natural Greek yogurt
- Finely grated zest ½ lemon
- 2 tbsp lemon juice
- 1 tbsp freshly chopped dill
Method
1. Preheat the oven to 200°C/Fan 180°C Fan/Gas Mark 6. Line a baking tray with foil or baking paper. Place the salmon fillets on the baking tray and season with salt and pepper. Sprinkle over the chilli flakes and drizzle over the oil. Bake for 10 - 15 minutes until cooked through and flaky, or until cooked to your liking.
2. Meanwhile, whisk the yogurt, lemon zest and lemon juice together in a bowl. Stir in the dill, and season to taste.
3. Serve the salmon with the yogurt sauce, and with potato wedges and roasted vegetables, if liked.
