Irish Savoury Mince & Carrots (slow cooker recipe)

Takes: 3 - 4 hours 10 minutes (high) or 7 - 8 hours 10 minutes (low) (plus thickening time)

Ingredients

- 600g lean beef mince
- 4 carrots, peeled and cut into small cubes or chunks
- 1 rich beef stock pot
- 4 tbsp Worcestershire sauce
- 4 tbsp tomato puree
- Salt and pepper, for seasoning
- 4 garlic cloves, crushed

Method

1. You can brown the mince in a frying pan with 1 tbsp of oil over a high heat, but it is not essential. If you do not brown it, cut it up with scissors so it does not clump. Add the mince and all the other ingredients to the slow cooker, season with salt and pepper and add 450ml of boiling water. Cook on high for 3 - 4 hours or low for 7 - 8 hours.

2. If you want a thick sauce, add 2 tbsp of cornflour mixed with 2 tbsp of water, or some gravy granules. The chef's preferred method is gravy granules or powder. Cook the mince on high for a further 20 - 30 minutes.

3. Serve the savoury mince with mashed potatoes, peas or broccoli, if liked.
