Ingredients
- Butter, for greasing
- 1 tsp grated orange zest
- 25g sultanas
- 25g candied peel
- 1 tbsp currants
- 2 tbsp rum
- 1 tsp vanilla extract
- 200g organic strong white flour, plus extra for dusting
- 75g caster sugar
- 1 tsp quick yeast
- ¼ tsp cinnamon
- ¼ tsp allspice
- ⅛ tsp nutmeg
- 100ml milk
- 1 tbsp oil
- 1 egg yolk
- 100g marzipan
- 50g butter, melted, for brushing
- 25g icing sugar
Method
1. Grease a large baking tray. Put the orange zest, sultanas, candied peel, currants, rum and vanilla extract into a bowl and mix well.
2. Combine the flour, sugar, yeast, cinnamon, allspice and nutmeg in a separate bowl.
3. Beat the milk, oil and egg yolk together in another bowl or jug and pour onto the flour. Add the fruit and stir until everything is combined in a dough. Cover with a large, upturned bowl and leave in a warm place for 1 hour.
4. Divide the marzipan into 20 pieces and roll each into a ball.
5. Put the dough onto a clean surface and dust with flour. Cut the dough into 20 pieces. Flatten each piece using clean fingers and put a marzipan ball in the middle. Draw dough around marzipan and pinch to seal.
6. Place the dough balls on the baking tray with the seal at the bottom. Cover with a clean tea towel and leave to rise for 1 hour.
7. Preheat the oven to 170°C/150°C Fan/Gas Mark 3. Bake the stollen bites for 9 - 12 minutes until very lightly golden. Remove from oven and transfer to a wire rack to cool.
8. Transfer the stollen bites to a large mixing bowl, drizzle over the the melted butter and toss gently until all the butter has been absorbed. Return the stollen bites to a wire rack to cool.
9. Put the icing sugar in a clean large bowl, add the stollen bites and toss gently until covered in icing sugar. Serve.
