Ingredients
- 500g packet gnocchi
- 1 head of broccoli, florets and stalks cut into 1cm pieces
- 2 tsp butter
- 1 red onion, thinly sliced
- 1 garlic clove, finely chopped
- 2 tsp fresh thyme leaves, plus extra for garnish
- 100ml double cream
- 150g mozzarella, finely chopped
- 6 rashers of bacon, torn or sliced into large pieces
Method
1. Cook the gnocchi in a large saucepan of boiling water according to the packet instructions, adding the broccoli florets during the last 2 minutes of cooking time. Drain well.
2. Meanwhile, melt the butter in a separate pan over a medium heat. Cook the onion, garlic and thyme for 4 minutes, stirring, until softened. Stir in the cream.
3. Preheat the grill to high. Add the gnocchi and broccoli to the cream mixture and toss well. Spoon into a baking dish. Arrange the mozzarella and bacon on top and grill for 5 minutes or until the broccoli is cooked and the bacon is crispy. Serve garnished with extra thyme, if liked.
