Fried Rice Omelette

Ingredients

- 500g leftover fried rice, or use 2 x 250g microwave rice
- 10 medium eggs
- Salt and freshly ground black pepper
- 1 tbsp vegetable oil
- 1 red chilli, deseeded and thinly sliced
- 15g coriander

Method

1. Heat the leftover rice in the microwave until piping hot. If using packet rice, cook according to the pack instructions.

2. Lightly beat the eggs with 2 tbsp of water in a large bowl until combined. Season with salt and pepper.

3. Add a quarter of the oil to lightly grease a small - medium frying pan set over a low - medium heat. Add one quarter of the egg mixture to the pan, tilting the pan slightly so the mixture covers the base. Cook for 1 - 2 minutes until the omelette is starting to set on top and becomes lightly browned underneath. Spoon one quarter of the hot rice along the centre of the omelette. Fold over the edges to enclose, then slide on to a warm plate.

4. Repeat with the remaining egg mixture and rice to make 4 omelettes. Sprinkle with chilli and coriander to serve.
