Herbed Chicken Schnitzel (meal for one)

Ingredients

- 1 chicken breast fillet, defrosted if frozen
- 1 small egg, beaten
- 45g stale white breadcrumbs
- 1 tbsp freshly chopped parsley
- Salt and freshly ground black pepper
- Flour, to dust
- Vegetable oil, to shallow fry

Method

1. Place the chicken breast between two sheets of baking paper and gently pound with a rolling pin or meat mallet to about 5mm thickness. Cut the flattened fillet in half.

2. Place the egg in a shallow bowl. Combine the breadcrumbs and parsley in another shallow bowl and season with salt and pepper. Dust the chicken pieces with flour, then coat in the egg, followed by the breadcrumb mixture, pressing down gently.

3. Heat a ½cm layer of the oil in a medium frying pan over a medium heat until a few breadcrumbs dropped in the hot oil sizzle and rise to the surface. Cook the chicken for 2 - 3 minutes on each side until golden and cooked through. Drain on kitchen paper and serve with a lemon wedge and herbed green beans, if liked.
