Ingredients
- 2 tsp vegetable oil
- ½ small onion, chopped
- 1 garlic clove, crushed
- 1 tbsp korma or tikka curry paste
- 3 tomatoes, chopped
- 400g can chickpeas, drained and rinsed
- Salt and freshly ground black pepper
Method
1. Heat the oil in a medium frying pan over a medium heat. Cook the onion and garlic for 4 - 5 minutes, stirring, until just softened. Stir in the curry paste and cook, stirring, for 1 minute.
2. Add the chopped tomatoes and 200ml just-boiled water. Bring to the boil, then reduce the heat, stir in the chickpeas and simmer for 7 - 8 minutes, or until the sauce has thickened. Season with salt and pepper. Serve garnished with freshly chopped coriander and a warm naan bread, if liked.
