Ingredients

- Low-calorie cooking spray
- 1 onion, finely diced
- 1 garlic clove, finely diced
- 1 red pepper, deseeded and finely diced
- 400g can red kidney beans, drained
- 400g can cannellini beans, drained
- 2 x 400g cans chopped tomatoes
- 2 tsp garlic granules
- 2 tsp chilli powder
- 2 tsp ground cumin
- 4 tsp smoked paprika
- Pinch sea salt and black pepper

To serve:

- 220g or 250g pack of microwave long-grain rice, cooked
- 40g reduced-fat Cheddar cheese, grated, per portion
- Shredded lettuce
- 15g tortilla chips per portion
- Coriander leaves
- Lime wedges

Method

1. Spray a frying pan with some low-calorie cooking spray and place over a medium heat. Add the onion, garlic and pepper and cook for 3 minutes until softened, then add the two cans of beans and fry for 5 minutes.

2. Add the tomatoes, garlic granules, chilli powder, cumin and paprika, and season with the sea salt and black pepper. Lower the heat and simmer for 10 minutes until reduced to a thickened sauce.

3. Pile the hot chilli onto the rice and top with the cheese, lettuce, tortilla chips, coriander and lime wedges for squeezing.
