Miso Mushroom Risotto

Takes: 30 minutes
Serves: 4

Ingredients

- 300g sticky rice, rinsed until water runs clear
- 750ml hot vegetable stock
- 25g butter
- 200g oyster mushrooms, sliced, or use chestnut
- 200g shiitake mushrooms, sliced, or use closed cup
- 3 spring onions, thinly sliced, white and green parts separated
- 125g miso paste
- 65g spinach
- Salt and freshly ground black pepper
- 2 tsp sesame seeds

Method

1. Cook the rice according to the pack instructions. Set aside for 10 minutes.

2. Meanwhile, melt the butter in a large frying pan over a medium heat. Cook the mushrooms and the white part of the spring onion for 5 minutes until softened.

3. Whisk the miso paste and 65ml water together in a jug, then add to the rice in the pan with the mushrooms and spinach. Stir until the spinach has wilted and add salt and pepper. Sprinkle with the sesame seeds and serve with green spring onion on top.

According to Costa Blanca Supermarket in Punta Prima they stock it.

A large health and nutrition store will probably also sell it as organic miso paste.

The Chinese food store along from Torrevieja bus station might possibly sell it.

El Corte Ingles stock the paste, so possibly one of their other brand stores such as Hipercor or Supercor may do likewise.

Hi Fred.

The "password token" is a temporary password or link that is automatically generated.

In the case of this forum if someone went through the "I forgot my password" process from the forum login screen, they would receive an automated email from the forum to the email address that they enter. That automated email would contain a clickable link (password token) to enable them to login to the forum, and from there they can go into their User Control Panel to change the password to something more personal.

It sounds like an erroneous error message in your case because you were able to reset your password, but I will look into it.
