Ingredients
- 175g caster sugar
- Juice of ½ lemon
- 6 ripe peaches, peeled, halved, stone removed and the flesh chopped
- 150g cherries, pitted
Method
1. Place the sugar and 300ml cold water in a saucepan. Heat gently, stirring, until the sugar has dissolved, then bring to the boil. Reduce the heat and simmer, without stirring, for 5 minutes or until the mixture is slightly syrupy. Stir in the lemon juice.
2. Place the chopped peaches in a heatproof bowl and pour over the syrup. Leave to cool. Put the mixture in a food processor or blender and pulse until smooth (you may need to do this in two batches).
3. Pour the peach mixture into a loaf tin or freezer-proof container and freeze for 1 - 2 hours until slushy. Mash the mixture with a fork, breaking up any ice crystals then return to the freezer for another 1 hour. Mash with a fork another two times, then stir in the cherries and freeze until firm.
4. Remove the sorbet from the freezer and stand at room temperature for about 20 minutes. Serve scooped into chilled bowls.
