Ingredients
- 800g pork loin steaks, cut into 3cm chunks
- 4 tbsp white or red wine vinegar
- 2 tsp dried oregano
- 1 large garlic clove, finely choppped
- 6 tbsp olive oil
- 4 large pitta breads
- 6 tbsp ready-made tzatzkik
- 2 tomatoes, sliced
- ½ cucumber, sliced
- 1 red onion, sliced
Method
1. Put the pork in a bowl with the vinegar, oregano, garlic and 4 tbsp oil. Mix well, cover and leave to marinate in the fridge for 4 hours or overnight.
2. Soak eight wooden skewers in cold water for 30 minutes. Thread the pork onto the skewers.
3. Preheat a griddle or frying pan over a high heat. Brush the pittas with the remaining oil and cook in the pan until warmed through. Set aside.
4. Cook the skewers in the same pan for 3 - 4 minutes on each side or until browned and cooked through.
5. Serve on the warmed pittas with the tomatoes, cucumber, sliced onion and tzatziki, garnished with fresh dill, if liked.
