Ingredients
- 100g 70% dark chocolate, broken into pieces
- 2 eggs, separated
- 20g caster sugar
- Berries and yogurt or whipped cream, to serve
Method
1. Place the broken-up chocolate in a heatproof bowl with 60ml water and set it over a saucepan of simmering water (making sure the bowl does not touch the water). Stir from time to time until it's melted, fully combined with the water and smooth.
2. Remove the bowl from the heat and leave to cool for 4 - 5 minutes. Then stir in the egg yolks and set aside.
3. Whist the egg whites in a bowl with the caster sugar until stiff. Using a metal spoon, fold one spoonful of the sweetened egg white into the chocolate mixture, and then follow with the rest. Fold gently, so as not to knock out the air from the egg whites.
4. Pour the mixture into four glasses and refrigerate until set. Serve topped with some berries and a little yogurt or whipped cream.
