Ingredients
- 2 tbsp mild curry paste
- 1 tsp mustard seeds
- 500g beef mince
- 400g can chopped tomatoes
- 200g green beans, trimmed and halved
- Salt and freshly ground black pepper
- Small handful of mint leaves, to garnish (optional)
Method
1. Heat a large frying pan over a medium heat. Add the curry paste and mustard seeds and cook, stirring, for 1 minute until fragrant.
2. Add the mince and cook for 2 - 3 minutes, breaking up any lumps, until browned. Add the tomatoes and beans. Bring to the boil and simmer for 2 - 3 minutes until the mince is cooked through. Season with salt and pepper.
3. Garnish the curry with the mint leaves, if using, and serve with quick-cook rice, carrot and orange salad and poppadoms, if liked.
