Salmon With Leeks & Cream (microwave)

Ingredients

- 250g (9oz) new potatoes, cut into roughly 1cm (½in) slices
- 1 medium leek (around 175g/6oz), trimmed and cut into roughly 1cm (½in) slices
- 25g (1oz) butter, cubed
- 1 heaped tbsp freshly chopped parsley or chives, plus extra to serve (optional)
- finely grated zest of ½ a small lemon
- 2 salmon fillets (each around 120g/4¼oz)
- 6 tbsp double cream
- Salt and freshly ground black pepper, for seasoning

Method

1. Put the potatoes and leek in a shallow microwaveable dish, season with salt and ground black pepper and toss together lightly. Dot with the butter and sprinkle with the parsley or chives.

2. Cover loosely and cook on high for 5 minutes (1000W), 6 minutes 10 seconds (800W), or until the potatoes are tender, stirring halfway through.

3. Sprinkle the vegetables with the lemon zest and place the salmon fillets skin-side down on top. Drizzle the cream, mainly over the potatoes and leeks, but a little over the salmon. Season with more ground black pepper.

4. Cover without sealing tightly and cook on high for 3 minutes (1000W), 3 minutes 40 seconds (800W), or until the salmon is just cooked.

5. Leave to stand for 3 - 5 minutes without uncovering - the fish will continue cooking.

6. Serve sprinkled with extra herbs, if you like.

Notes:

A. If your microwave does not have a turntable, it is important to turn the food a few times to make sure it cooks evenly. Please take care when turning as the food will be hot so use oven gloves or tongs.

B. All microwave ovens may vary, the cooking times above are a guide.
