Ingredients
- 2 tsp white wine vinegar
- Salt and freshly ground black pepper
- 8 eggs
- 8 slices ciabatta bread
- 165g wafer thin ham
- 150g ready-made hollandaise sauce (fresh or from a jar)
- 2 tbsp freshly chopped chives
Method
1. Preheat the grill to high. Half-fill a large, deep, frying pan with water, add the vinegar and a pinch of salt and bring to the boil. Reduce the heat to a simmer, swirl the water with a fork to create a whirlpool and gently break 1 egg into a cup and slide into the water, then repeat with 3 more eggs. Cook for 2 - 4 minutes or until the eggs are cooked to your liking. Transfer to a plate with a slotted spoon. Repeat with the remaining eggs.
2. While the eggs are cooking, toast the bread and warm the hollandaise sauce, following the jar or pack instructions.
3. Top the toast with the ham and eggs and spoon over the warm sauce. Season with black pepper and garnish with the chives. Serve with salad leaves and freshly made mimosa, if liked.
