Ingredients
- 1 pork loin steak
- 1 tsp oil
- 400ml (14fl oz) hot chicken or vegetable stock
- 1 small garlic clove, crushed
- 1 tsp soy sauce
- ½ tsp toasted sesame oil
- 1 tbsp miso paste
- Ground white pepper
- 1 nest of dried noodles
- 150g (5oz) red, yellow or green pepper, deseeded and chopped
- 2 spring onions, thinly sliced
- Juice from ¼ lemon
Method
1. Preheat the oven to 200°C/Fan 180°C/Gas Mark 6. Coat the pork in the oil, place in a small roasting tin and roast for 30 minutes or until cooked through, and the fat has browned.
2. Combine the stock, garlic, soy sauce, sesame oil and miso paste in a pan. Season with pepper, then taste and add more soy sauce, sesame oil and/or miso paste if needed until you are happy with the flavour. Bring to the boil.
3. Add the noodles to the pan and simmer for 4 minutes or until tender, stirring with a fork halfway through to separate the strands.
4. Slice the roast pork and add to the noodle soup along with the pepper, spring onion and lemon juice. Mix well, then ladle into a bowl and serve.
