Spicy Chicken Burger & Sweet Potato Chips

Preparation Time: 15 minutes
Cooking time: 30 minutes + 1 hour resting in fridge
Serves: 4

If served as four portions, provides 392 cals, 20g fat (of which 4g saturates), 8g sugar and 1.6g salt per portion.

Ingredients

- 500g (1lb 2oz) 5% fat chicken mince
- 1 tsp chilli flakes
- 1 tsp ground coriander
- 1 tsp ground cumin
- ½ tsp black pepper
- 1 tsp garlic powder
- 1 tsp salt
- 1 egg yolk
- 10g (¼oz) fresh coriander or parsley, finely chopped
- 3 sweet potatoes, washed and sliced into chips
- 3 tbsp olive oil
- 1 tbsp mixed herbs

Method

1. Preheat the oven to 200°C/Fan 180°C/Gas Mark 6.

2. Put the chicken into a bowl and scatter over the spices, garlic powder and salt. Squish everything together then add in the egg yolk and coriander, squeeze and squish again until everything is mixed together. Cover and place in the fridge for at least 1 hour.

3. Put the sweet potato chips into a bowl, pour over 2 tbsp of the oil and the herbs, mix together coating the potatoes evenly. Scatter the chips onto a large non stick tray.

4. Remove the chicken mince from the fridge and divide the mince into 4 equal pieces and form into burger shapes.

5. Heat the last tbsp of oil in a saute pan over a medium heat, place the burgers in the pan and cook on each side for 1 - 2 minutes until golden. Remove from the pan and place the burgers onto the tray alongside the chips.

6. Bake in the preheated oven for 25 - 30 minutes, ensuring the burger is cooked thoroughly and the chips are crisp.
