Ingredients
- 2 - 3 oranges, washed and thinly sliced
- 2 tbsp runny honey
- 150g (5½oz) light olive oil
- 175g (6oz) caster sugar
- 3 large eggs
- 100ml (3½fl oz) milk
- 70g (2½oz) thick yogurt
- 1½ tsp orange extract
- 200g (7oz) fine semolina
- 75g (2¾oz) plain flour
- 3 tsp baking powder
- Greek yogurt and runny honey
Method
1. Pre-heat the oven to 170°C/Fan 150°C/Gas Mark 3.
2. Line sides and bottom of 23cm (9in) round springform tin with parchment. Place the sliced oranges over the base and drizzle with the honey.
3. Using a standard mixer, whisk the olive oil, sugar and eggs together until very light and foamy.
4. Whisk in the milk, yogurt and orange extract.
5. Sieve the semolina and flour with the baking powder over a piece of parchment until well combined, add the flour to the mixing bowl, whisk again then pour the batter into the prepared tin.
6. Bake for around 50 minutes, until an inserted cake skewer comes out clean.
7. Leave in the tin for 10 minutes, invert the tin, remove the cake and leave to cool. Serve orange side up with thick Greek yogurt and honey.
