Bloomer Picnic Sandwich

Serves: 4

If served as four portions, provides 385 cals, 17g fat (of which 5g saturates), 4g sugar and 1.7g salt per portion.

Ingredients

- 1 bloomer load, 400g (14oz)
- 4 slices of ham
- 1 ball mozzarella cheese, sliced
- ¼ cucumber, deseeded and sliced
- 1 tbsp olive oil
- 1 large tomato, thinly sliced
- 1 tbsp pesto (optional)
- Balsamic vinegar, to drizzle
- A handful of fresh basil
- ¼ bag of washed salad leaves

Method

1. Slice off the top of the loaf, remove the bread inside to create a bowl. No need to waste the bread you have removed, you can make breadcrumbs and freeze for using at a later date.

2. Lay the ham on the base ensuring it's well covered. Layer the sliced cheese followed by the sliced cucumber and tomato.

3. Drizzle over the olive oil, pesto (if using), balsamic vinegar and season with salt and pepper. Add basil leaves and lettuce. Cover with the bread top and press down and cling wrap tightly.

4. Leave in the fridge so the sandwich has time to settle before slicing into four portions.
