Ingredients
- 1 tbsp of butter
- 1 onion or shallot
- 250g (8oz) milk
- 250g (8oz) water
- 2 potatoes, cut into cubes
- 250g (8oz) smoked haddock
- A handful of parsley or chives to garnish
Method
1. Heat the butter in a saucepan, add onion or shallot and fry until translucent; do not brown.
2. Add the milk and water to the saucepan followed by the potatoes. Bring to the boil and then gently simmer until tender. Remove to a dish. Add the fish to the pan, ensuring it is covered, then gently poach for 5 minutes.
3. Remove the fish from the saucepan and flake it. Return the potatoes and fish to the saucepan and cook for a further 5 minutes.
4. Serve with a sprinkle of fresh parsley or chives.
