Preparation Time: 15 minutes
Cooking time: 27 minutes
Serves: 4 persons

This meal, if served as four portions, provides 487 cals, 26g fat (of which 4.5g saturates), 5g sugar and 0.6g salt per portion.

Ingredients

- 200g (7oz) green beans, topped and tailed
- 20 small cherry tomatoes, halved
- 1 handful of pitted black olives
- 1 packet of Mediterranean-style grains
- 2 tbsp sundried tomato paste
- 2 lemons, 1 x juiced and 1 x finely sliced
- Salt and pepper
- 4 salmon fillets

Method

1. Preheat oven to 200°C/Fan 180°C Gas Mark 6.

2. Blanch the green beans for 2 minutes, drain and put in a large bowl with the tomatoes and stoned olives.

3. Empty packet of grains into a bowl and break down.

4. Into this bowl mix in the tomato paste and ½ the lemon juice, then tip in the olives, tomatoes and green beans.

5. Line a medium-sized baking tray with baking parchment.

6. Tip the mix onto the parchment.

7. Place the salmon fillets on top of the beans.

8. Lay the lemon pieces over the salmon fillets.

9. Pour the remaining lemon juice over the salmon.

10. Cover tightly with foil and roast for 20 - 25 minutes.
