Ingredients
- 2 plums, stoned and chopped
- 500ml sparkling wine, chilled
- Thyme sprigs, to garnish (optional)
Method
1. Place the plums in a saucepan, pour in 100ml water and bring to the boil over a high heat. Lower the heat and simmer for 5 minutes, then push the plum mixture through a sieve into a jug. Discard the pulp. Chill until needed.
2. Divide the plum mixture between 4 cocktail glasses and fill to the top with the sparkling wine. Stir each one with a spoon. Garnish with the thyme sprigs, if using. Serve with cheese biscuits, if liked.
