Ginger & Honey Loaf Cake

Ingredients
- 100g butter, plus extra for the tin
- 100g honey
- 125g dark brown demerara sugar
- 4 tbsp milk
- ½ tsp vanilla extract
- 200g self-raising flour
- ¼ tsp baking powder
- 1 tsp ground ginger
- 1 tsp ground cinnamon
- Large pinch of grated nutmeg
- Large pinch of ground cloves
- Large pinch of ground allspice
- 1 egg, beaten
Method
1. Heat the oven to 180°C/Fan 160°C/Gas Mark 4. Butter and line a 900g loaf tin. Put butter, honey and sugar in a pan and warm over a low heat, stirring occasionally, until butter has melted and sugar dissolved. Remove from heat, stir in milk and vanilla, set aside to cool.
2. Tip flour, baking powder, spices and a pinch of salt into bowl. Add egg and melted butter mixture, gently fold together. Tip into tin, place on baking tray and bake for 40 minutes or until skewer comes out clean. Cool for 10 minutes in tin, turn onto cooling rack and cool completely. Will keep in airtight container for up to four days.
