Rice Patties With Bacon & Onion

Takes: 22 - 26 minutes (plus cooling and chilling time)
Serves: 8 (makes)

Ingredients

- 100g long grain or basmati white rice
- 3 rashers streaky bacon
- ½ red onion, finely chopped
- 1 garlic clove, crushed
- 4 tbsp plain flour
- 2 eggs, beaten
- 50g Cheddar, roughly grated
- Salt and freshly ground black pepper
- 1 - 2 tbsp vegetable oil
- Cress, to garnish (optional)

Method

1. Cook the rice according to the pack instructions. Drain and spread out on a plate to cool completely.

2. Meanwhile, put the bacon in a dry frying pan, cook over a medium heat, turning occasionally for 5 - 8 minutes until crispy. Remove, set aside to cool, then finely chop.

3. Put the rice in a large bowl with the onion, garlic, flour, eggs, Cheddar and bacon. Season with salt and pepper and mix well. Cover the bowl and chill in the fridge for 30 minutes.

4. Heat 1 tbsp of the oil in a large frying pan over medium - high heat. Place heaped tablespoons of the rice mixture into the pan (you may need to do this in batches). Flatten each patty with the back of a spoon and fry for 4 - 6 minutes, turning once, until firm and golden on both sides.

5. Remove from the pan and place on a large plate lined with kitchen paper. Transfer to a serving plate and garnish with cress, if using. Serve with fresh tomato salsa, if liked.
