Gingerbread Boys & Girls

Takes: 45 minutes (plus chilling and cooling time)
Serves: 40 (makes)

Ingredients

- 450g plain flour
- 330g caster sugar
- 1 tbsp ground ginger
- 1 tsp ground cinnamon
- 1 tsp mixed spice
- 1 tsp bicarbonate of soda
- 200g butter, melted
- 1 tbsp golden syrup
- 1 egg, lightly beaten
- Ready-made royal icing, to decorate
- Pink and silver sugar pearls, to decorate

Method

1. Sift the dry ingredients into a large bowl. Combine the butter, syrup and egg in a small bowl, then stir into the dry mixture. Knead until you have a smooth dough.

2. Divide the dough into three. Roll one piece between two sheets of baking paper until 3mm thick. Remove the top sheet of baking paper, then use the bottom sheet to slide on to a baking tray. Chill for 30 minutes until firm. Repeat twice with the remaining dough.

3. Preheat the oven to 180°C/160°C Fan/Gas Mark 4. Line three baking sheets with baking paper.

4. Use a 7cm gingerbread cutter to stamp out around 40 figures, rerolling the trimmings as necessary. Lift with a palette knife and place about 3cm apart on the lined baking sheets. Bake for 10 - 12 minutes, until golden brown. Cool completely on the baking sheets.

5. Prepare the royal icing following the instructions on the tub and spoon into a plastic food bag, then snip off the end. Using the image as a guide, decorate the gingerbread with the royal icing and sugar pearls. Serve.
