Ingredients

- Ice cubes
- 50ml gin
- 15ml Cointreau
- 15ml lime juice
- 15ml simple syrup*
- 30ml cranberry juice
- 30ml strong cold coffee brew
- Prosecco or Champagne
- Fresh cranberries and a rosemary or mint sprig, to garnish

Method

1. Fill a cocktail shaker with ice, then add the gin, Cointreau, lime juice, syrup, cranberry juice and coffee.

2. Shake vigorously to create a stiff foam, strain into a Martini glass and top with a splash of prosecco or Champagne. Garnish with fresh cranberries and a rosemary or mint sprig.

*For a sugar syrup, boil 125ml water and 125g granulated sugar over a medium heat, stirring, until the sugar has dissolved.
