Takes: 20 minutes (plus chilling time)

Ingredients

For the base:

- 3 digestive biscuits
- 20g salted or unsalted butter, melted

For the filling:

- 115g full-fat soft cheese, at room temperature
- 1 tbsp icing sugar
- 20g chocolate orange, plus 40g for the topping, melted

For the topping:

- 2 chocolate orange mini segments
- Gold or orange sprinkles, to decorate (optional)

Method

1. For the base, put the biscuits into a food processor and process until finely crushed. Alternatively, put the into a plastic bag and crush with a rolling pin. Tip into a small mixing bowl, then pour in the melted butter and mix until fully combined. Divide the mix between 2 small pots or ramekins and press down gently with the back of a spoon.

2. For the filling, in a small mixing bowl, beat together the soft cheese, icing sugar, and 20g of melted chocolate orange with an electric hand mixer until smooth, then scoop the mixture onto the bases and spread it out to the edges.

3. For the topping, pour the remaining melted chocolate orange onto each cheesecake and smooth it out to the edges so the cheesecake is completely covered, then decorate with a mini chocolate orange segment and gold or orange sprinkles if you wish. Chill in the fridge for at least 1 hour for best results. Store in the refrigerator for up to 3 days.
