Ingredients
- ½ tbsp olive oil
- 4 thick pork sausages
- 1 small onion, sliced
- 1 garlic clove, crushed
- ¼ tsp chilli flakes
- 227g can chopped tomatoes
- 200ml passata
- 1 small courgette, halved lengthways and sliced
- Salt and freshly ground black pepper
- 25g feta, crumbled
- Small handful of pitted black olives
- 1 tbsp freshly torn basil, to garnish (optional)
Method
1. Preheat oven to 180°C/Fan 160°C/Gas Mark 5. Heat the oil in a large frying pan over a high heat. Cook the sausages for 4 - 5 minutes, turning, until browned. Transfer to a large baking dish.
2. In the same pan, cook the onion, garlic and chilli flakes for 2 - 3 minutes, stirring often, until the onion is softened. Stir in the tomatoes, passata and courgette and season with salt and pepper. Bring the mixture to the boil, then pour over the sausage in the dish.
3. Cover the dish with foil and bake for 15 - 20 minutes or until the sausages are cooked. Remove the foil and sprinkle over the feta and olives and garnish with the basil, if using. Serve with couscous, if liked.
