Ingredients
- 2 tsp piri-piri seasoning
- 3 tbsp olive oil
- 1 tsp chilli flakes
- Finely grated zest and juice of 1 lemon
- 500g chicken breast, or use thigh fillets, cut into even-sized chunks
- 1 courgette, sliced
- 24 cherry tomatoes
Method
1. Combine the piri-piri seasoning, 2 tbsp of the olive oil, the chilli flakes and lemon zest and juice in a large bowl. Add the chicken and toss well. Leave to marinate for 30 minutes or overnight in the fridge.
2. Preheat a barbecue following manufacturer's instructions. Thread the chicken on to 8 skewers (if wooden, pre-soak for 30 minutes in cold water), alternating with courgette and tomatoes.
3. Cook the kebabs on the barbecue for 15 minutes, turning regularly, brushing with any leftover marinade, or until cooked and beginning to char. Serve straightaway with lime wedges for squeezing, if liked.
