Ingredients
- 12 fresh strawberries, hulled and sliced
- Small handful of fresh mint leaves
- 225g sugar syrup*, or to taste
- 100ml lemon juice
- 170ml vodka
- Ice
- Soda water, chilled
*For the sugar syrup, boil 200g caster sugar and 200ml water together in a pan over a medium - high heat, stirring until the sugar has dissolved. Leave to cool.
Method
1. Put the strawberries, mint, syrup, lemon juice and vodka in a large jug and stir well.
2. Half fill four glasses with ice. Divide the strawberry vodka mixture between the glasses and top up with soda water. Serve.
