Ingredients
- 3 corn cobs
- 500g asparagus
- 2 large ready-made pizza bases
- 175g tomato pizza sauce
- 125g ready-grated mozzarella
- 125g Cheddar, grated
- 2 tbsp olive oil
- Handful of fresh sage leaves
Method
1. Preheat oven to 200°C/Fan 180°C/Gas Mark 6. Cook the corn cobs in a large saucepan of boiling water for 4 minutes, adding the asparagus after 2 minutes. Drain, cool for 5 minutes, then slice the kernels away from the corn cobs and halve the asparagus.
2. Place each pizza base on a baking sheet. Spread the pizza sauce over the bases. Top with the corn and asparagus and scatter over the cheeses. Bake for 10 - 12 minutes until golden and bubbling.
3. Meanwhile, heat the oil in a small frying pan over a high heat. Fry the sage leaves for about 30 seconds until crisp. Drain on kitchen paper. Serve the pizzas topped with the sage leaves and with mixed salad, if liked.
