Whisky Marmalade Bread & Butter Pudding

Takes: 55 minutes (plus resting time)
Serves: 4 - 6

Ingredients

- 300g butter, softened
- 8 thick white bread slices
- 5 tbsp marmalade
- 3 eggs
- 60g caster sugar or brown sugar
- 2 tbsp whisky
- 275ml milk
- 75ml double cream

Method

1. Butter the bread on both sides. Spread half of the buttered slices with the marmalade, reserving 1 tbsp. Top with the remaining buttered bread slices to make 4 sandwiches. Halve the sandwiches (triangles or oblongs) and nestle into a baking dish that snuggly fits the sandwiches.

2. Whisk the eggs, sugar, whisky, cream and the remaining marmalade together in a bowl. Pour the custard over the marmalade sandwiches, pressing the bread down into the liquid. Leave to rest for 30 minutes.

3. Preheat the oven to 180°C/Fan 160°C/Gas Mark 4. Bake the pudding for 35 - 40 minutes or until golden brown. Leave to cool for 10 minutes, then serve with hot custard, if liked.
