Ingredients
- 50g (1¾oz) butter, cubed
- 50g (1¾oz) caster sugar
- 1 medium egg
- ½ tsp vanilla extract
- 50g (1¾oz) self-raising flour
- ¼ tsp baking powder
For the icing:
- 100g (3½oz) butter, cubed
- 1 tsp vanilla extract
- 1 tsp milk
- 200g (7oz) icing sugar
- 1 tsp freeze-dried raspberry or strawberry pieces, to decorate (optional)
Method
1. Line 4 medium microwaveable ramekin dishes - around 8cm (3in) in diameter - with paper cupcake cases. If you do not have ramekin dishes, place the cases in microwaveable cups or mugs instead.
2. Put the butter for the cakes in a large microwaveable mixing bowl and cook on high for 10 seconds (1000W), 15 seconds (800W), or until softened but not melted.
3. Add the sugar, egg, vanilla extract, flour and baking powder and beat with a wooden spoon or whisk until smooth and creamy.
4. Divide the mixture between the cupcake cases as evenly as you can (weigh the mixture, if you like).
5. Place the ramekins in a circle, spaced well apart, on the turntable or the floor of the microwave. Cook uncovered on high for 2 minutes (1000W), 2½ minutes (800W), or until risen and just firm to the touch. They should still look just slightly damp around the edges, so do not be tempted to overcook them. Leave the cupcakes to stand for 5 minutes before removing from the microwave.
6. Turn out on to a wire rack, flip the right side up and leave to cool.
7. To make the icing, place the butter in a large microwaveable bowl, and cook on high for 20 seconds (1000W), 30 seconds (800W), or until softened but not melted.
8. Add the vanilla extract and milk, then sift the icing sugar on top. Beat hard with a wooden spoon until smooth and fluffy, or use an electric whisk.
9. Either spoon or pipe the icing on to the cakes, decorate with freeze-dried raspberry or strawberry pieces, if using, and serve.
Notes:
A. If your microwave does not have a turntable, it is important to turn the food a few times to make sure it cooks evenly. Please take care when turning as the food will be hot so use oven gloves or tongs.
